The official 3-2-1 formula endorsed by Campari Group is 90 ml Prosecco + 60 ml Aperol + 1 splash of soda water, served over ice in a large wine glass with an orange slice on top. Aperol is a bittersweet Italian apéritif liqueur created in 1919 by the Barbieri brothers in Padua. It carries notes of bitter orange, rhubarb and gentian at just 11% ABV. Build the drink right in the glass. Fill it with ice, pour the Prosecco first so it doesn't fizz over, add the Aperol, top with soda, then stir gently. The finished cocktail lands around 8–11% ABV, light enough to sip during the day.

FAQ
Can I substitute Aperol with Campari? Yes. That variation goes by Campari Spritz or Bitter Spritz. Campari is more bitter and stronger (25% ABV vs 11%), so you end up with a more intense, less sweet drink.
Why Prosecco and not Champagne? Prosecco is Italian, like the drink itself, costs less, and runs a little sweeter with softer bubbles, which suits Aperol better. Champagne comes out too dry and toasty, and that throws off the balance.
Can I batch it for a party? Pre-mix the Aperol portion in a pitcher, but hold the Prosecco and soda until you're ready to pour. Add them early and the bubbles flatten, and the drink loses its signature lift.
