Bolo de rolo: Pernambuco’s rolled cake
The bolo de rolo is one of the signature desserts of Pernambuco, in northeastern Brazil. You take an ultra-thin sponge layer (about 1 mm thick), spread creamy goiabada (guava paste) across it, then roll the whole thing into a tight cylinder. Slice it and you get dozens of fine spirals alternating between cake and goiabada. That swirl is what people recognize it by.

It first appeared in the 19th-century sugar-cane engenhos (mills) of Pernambuco, an adaptation of the Portuguese colchΓ£o de noiva (literally “bride’s mattress”), which in turn came from French rolled sponge cakes. In 2007 it was registered as Cultural Heritage of Pernambuco by IPHAN (Brazil’s national heritage institute). Today it’s a fixture of the food tourism trail through Recife and Olinda.

FAQ
Why does the cake have to be so thin? The whole look depends on having dozens of fine spirals. Each layer is baked as a thin sheet on a flat pan and rolled while it’s still warm, otherwise it cracks. Go thicker than 2 mm and you end up with only a handful of spirals, which loses the traditional appearance.
What kind of goiabada should I use? Go for goiabada cremosa, the soft, spreadable guava paste, rather than the firm block-style. If the firm kind is all you can find, melt it down with a splash of water until it spreads.
How long does it keep? Wrapped in plastic film at room temperature it lasts 5–7 days, and refrigerated up to 15 days. All that sugar in the goiabada works as a natural preservative. Don’t freeze it, though; thawing wrecks the texture of the spirals.
