Scaling a recipe up or down
To double or scale a recipe, multiply every ingredient by a scaling factor. So 200 g flour Γ 2 = 400 g, and 3 eggs Γ 2 = 6 eggs. Linear scaling holds up well in baking, where the proportions behave like chemistry: flour, sugar, leavening agent (baking powder/soda), liquid and fat all have to stay in the same ratio. Two things trip people up, though. The first is that salt and strong seasonings do not scale linearly. Double the salt and it can come out oversalted, because your palate stops registering the difference past a point. Go with 1.5Γ to start and taste from there. The second is that cooking time does not scale linearly in oven-baked goods. A doubled cake is thicker rather than wider, so it often wants a lower temperature and more time on the clock. If you want to keep the same height, the pan needs twice the area (radius Γ β2), or just split the batter across two pans.

How do I scale an egg by 1.5? Beat one egg, weigh it (β 50 g), then use half of that (β 25 g) together with a whole egg. That gets you around the awkward "half an egg" situation.
Does baking time double when I double the cake? No. It goes up, but not in proportion. Trust a thermometer (internal 95β98 Β°C for cakes) or the toothpick test instead of watching the clock.
