Cockroach Density in Commercial Kitchens
When inspectors size up a roach problem in a kitchen, they usually talk in terms of density. Counting 10 to 50 individuals points to a light infestation. Somewhere between 50 to 100 is moderate. Anything past more than 100 is severe, and at that point you need a professional exterminator in fast. The math here is straightforward: cockroaches ≈ kitchen_area_m2 × density_factor, where the factor shifts according to which level of infestation you report.
You'll mostly run into two species. Periplaneta americana is the big American cockroach you find in sewers and warehouses. Blattella germanica is the small German cockroach, and it's the one that shows up far more often in restaurants and food-service kitchens. The trouble with B. germanica is that it breeds quickly and tucks itself into narrow cracks close to heat sources, which makes it stubborn to wipe out.
Applications
Sanitary inspectors from ANVISA rely on it, since RDC 216/2004 sets the good-practice rules for food service, and so do auditors at SISBI/MAPA who check food establishments. Pest-control crews use it when they plan an insecticide application, and restaurant managers reach for it to document their integrated pest management (IPM) programs.
