Reading gas mark on a Celsius dial

A British recipe says gas mark 6 and your oven is marked in degrees. In Brazil it gets more confusing, because the stove has a knob numbered 1 to 9 that looks like the same scale but is not: it only meters gas flow, with no standard temperature behind it. Gas mark, on the other hand, has a settled conversion table. Enter the number from the recipe to see the approximate Celsius value.

The table used here is the standard British one: 1 = 140 °C, 2 = 150, 3 = 170, 4 = 180, 5 = 190, 6 = 200, 7 = 220, 8 = 230 and 9 = 240. The steps are uneven, which surprises people at first: 10 degrees between marks 1 and 2, but 20 between 6 and 7. Decimal input is rounded to the nearest whole mark, and anything outside 1 to 9 quietly falls back to 190 °C rather than flagging an error.

Treat the result as a starting point. A domestic oven commonly runs 15 to 20 degrees off its dial, and a fan oven wants about 20 degrees less than the recipe states. A cheap oven thermometer settles the question for good. If your stove has only a flame knob with no temperature markings at all, this table does not describe it.
