Oven preheat time estimate
How long an oven takes to preheat comes down to a few things: the type of oven, the temperature you're aiming for, and how much metal is sitting on the racks inside. A few rough figures to work from. A conventional gas oven needs around 10–15 min to hit 200 °C. A fan-assisted (convection) electric one does it in roughly 5–8 min, and an air fryer in 2–3 min. Here's the catch most people miss: the thermostat still needs extra time to stabilize once the indicator light goes out, and the air inside can swing ±15 °C while the cavity walls catch up. Example: a domestic gas oven set to 200 °C will usually beep "ready" near the 10-min mark, but giving it 15 min before you slide in bread or pizza gets you more consistent results, since the stone and walls are still soaking up heat. Preheat with the rack already in place too. An empty rack just acts as a heat sink at the start.
Applications
It comes in handy for home cooking, so you know when to start prepping. Artisan baking leans on it where temperature has to be exact (sourdough, croissants, macarons). It matters a lot for wood-fired or steel-stone pizza, where the stone itself wants 30–60 min to reach 250–300 °C. And it's useful for energy planning, since preheating a 2 kW oven for 10 min runs you about 0.33 kWh.
FAQ
Can I skip preheating? With roasts and casseroles you can get away with it, since they put up with a slow ramp. Breads, pizza, soufflés and biscuits are a different story. That initial thermal shock is what drives the rise and forms the crust, so it isn't optional.
Why does my food brown unevenly? Two usual suspects: the oven has hot spots, or you started cooking before the cavity walls had a chance to even out. Give it an extra 5 min after the "ready" beep, and rotate the tray halfway through.
Does the rack position matter? It does. The bottom rack heats from below, which is good for getting a crust. The top one browns the surface, handy for gratins. If you're not sure, the center rack is the safest bet.
