Replacing refined sugar with brown sugar
When it comes to sweetness, the swap is basically 1:1 by volume or weight. One cup of brown sugar takes the place of one cup of refined sugar, so the 200 g of refined sugar in a cookie recipe just become 200 g of brown sugar. The sweetness lands in the same ballpark because brown sugar is roughly 95% sucrose plus ~5% molasses. That molasses is what carries the minerals (iron, calcium, potassium) along with the caramel-toffee note you taste. What you get is a darker dough, a touch more moist since molasses holds onto water, and a hint of caramel. Demerara falls somewhere between the two: less refined than white sugar, but with less molasses than brown. Its crystals stay crunchy, which makes it great for sprinkling on top. One thing to keep in mind: brown sugar leaves cookies softer and chewier, where white sugar pushes them crispier. Set your expectations around that.
Applications and context
It turns up all over confectionery, from chocolate-chip cookies to banana cake. It does great work in BBQ sauces, marinades and glazes, where the molasses caramelizes beautifully, and it folds nicely into oatmeal, granolas and porridges. In Brazilian cooking, the brown-sugar brigadeiro and brown-sugar paçoca have caught on as trendy takes on the refined-sugar originals.

Is brown sugar healthier than refined? Only barely. The extra minerals add up to very little; a tablespoon gives you about 1% of your daily iron. Calorie-wise the two are nearly the same (~387 kcal/100 g). What you really gain is flavor, not nutrition.
Does brown sugar change cake texture? It does. It adds moisture and density, so cakes come out more "wet" and heavier. To balance that, cut 1-2 tablespoons of liquid from the recipe.
Can I use demerara instead of brown? For sweetness, sure. The catch is that demerara's bigger crystals don't dissolve all the way, so it shines in coffee and sprinkled toppings. If you're putting it in dough, grind it to a powder first.
