Replacing cow's milk with plant-based milk

As a starting point, go 1:1 by volume: 250 mL of cow's milk becomes 250 mL of soy, almond, oat, coconut or rice milk. A pancake recipe with 200 mL of milk turns out the same with 200 mL of oat. The catch is that each base behaves on its own terms. Soy carries the best protein profile (about 3 g per 100 mL, close to cow's milk), which is what makes it the go-to for baking and bechamel-style sauces. Almond runs lighter and more watery (~1 g protein/100 mL); fine in smoothies, but it falls apart in custards. Oat is naturally sweet and creamy, and that is why people reach for it in coffee. Coconut brings a lot of fat, which suits curries and ganaches yet sits heavy in cereals. Goat's milk has less lactose than cow's milk and swaps in 1:1 behaving almost identically. One thing worth flagging: vegan milks have no casein, so any "cheese" you make from them won't melt or stretch the way dairy cheese does.

This matters a lot for anyone with lactose intolerance or cow's milk protein allergy (CMPA), which shows up often in pediatrics, as well as for vegetarian and vegan diets and recipes reworked for restricted menus. Can I make pudim de leite condensado with plant milk? Yes, using vegan condensed milk (cashew or soy). With less protein the texture comes out softer, so add a touch more cornstarch or reach for agar instead of gelatin.

Does plant milk curdle with lemon for "buttermilk"? It can. Soy and oat curdle once you stir in vinegar or lemon, standing in for buttermilk in cakes and pancakes. Almond curdles less readily.
