What a vineyard produces comes down to which cultivars you grow, how the vines are trained, and the weather across the cycle. The math here is tons = area_ha × base_yield_t_per_ha × climate_factor. That climate factor usually sits between 0.6 and 1.2: it drops when frost, hail or too much rain hit the block, and it climbs in a mild, sunny season that brings a proper water deficit at ripening.
Fine-wine Vitis vinifera cultivars tend to land around 8–12 tons per hectare. American and hybrid table grapes go higher: Niagara, Isabel and Bordô reach 12–18 tons per hectare, supplying the table-grape and juice markets. The Serra Gaúcha (RS) is the heart of fine-wine production. Out in the Vale do São Francisco, near Petrolina and Juazeiro, vines never go dormant, so they crop year-round and bring in something like 1.5 million tons per year of table and wine grapes.
